This spirit was originally distilled in Neuchatel, Switzerland - but its popularity is ever connected to the streets, bistros, and by-ways of fin-de-siecle Paris. Absinthe is a spirit derived from herbs - with a distinct anise flavor with a touch of underlying fennel. We could think of nothing better than combining fine imported Belgian dark chocolate, butter, cream, and French absinthe into our homage to a brilliant period in artistic history. Absinthe, due to its herbal base, is most often green (although a clear version can sometimes be spotted). The distinctive color of the liquour gave rise to its being referred to as "la fée verte" (the "green faerie").

The sprit is best served in the traditional way - a slotted spoon is placed over a glass containing an ounce of absinthe. A sugar cube is placed on the spoon and cool water poured over the sugar. The ratio is usually 3-5 parts water to one part absinthe. Components of absiunthe that are not soluble in water (such as fennel or satar anise) will be released - clouding the drink - the louche. Water allows the flavors overpowered by the anise to emerge and blossom.

Green Faerie Tasting Notes:
Beginning: Dark chocolate, with a slight flush of sweetness
Middle: Chocolate ganache with cream and buttery undertones and the emergence of anise, fennel, and sugary sweetness.
Finish: Medium, with a rise in anise and a return of the initial dark chocolate.
